Portnoy having sex with a piece of liver certainly rivals the strangeness inherent in Pynchon and DeLillo, and may have even inspired it...

You writer's intuition hit the nail on the head.

Pynchon was flabbergasted that a world in which Saul Bellow and Philip Roth can coincide. He mentioned it in his collection of short stories "Slow Learner." His first novel V even features a Jewish woman getting a rhinoplasty which I feel with all it's overtones was reference to Roth's writing style. It does feel like they are in a competition to outweird each other or to make the craziest connections.
